Since my trees have been loaded with star fruit and I cannot give them away fast enough, I have been making carambola jam. With the right packaging, it makes for a great gift from your kitchen.
- 3 lbs carambola (star fruit)
- 3 1/2 cups of water
- 3 1/2 cups of sugar
- Juice of two lemons
- 1 tsp salt
Wash the carambola. Cut off the winged edges and remove the seeds. Chop fruit into smaller pieces.
Place chopped star fruit in a saucepan.
Add 3 1/2 cups of water. Boil the star fruit for 15 minutes, or until tender.
Add the remaining ingredients and boil until the jam sets.
Pour the jam into sterilized canning jars.
